Maple-pumpkin Sauté

Ingredients

- 1 1/2 lbs fresh pumpkin, cubed & peeled (4 cups)
- 1 1/2 cups apples, chopped
- 1/2 cup onion, finely chopped
- 1/3 cup raisins
- 2 tablespoons butter
- 3 tablespoons maple syrup
- 1/4 teaspoon salt
- 1/4 teaspoon ground ginger
Recipe
- 1 melt butter in a large non-stick skillet.
- 2 combine the next 4 ingredients in the skillet and cover.
- 3 cook over medium-high heat 20 minutes or until tender, stirring occasionally.
- 4 stir in syrup, salt, and ginger.
