Maple-pumpkin Sauté

Ingredients

  • Servings: 4
  • 1 1/2 lbs fresh pumpkin, cubed & peeled (4 cups)
  • 1 1/2 cups apples, chopped
  • 1/2 cup onion, finely chopped
  • 1/3 cup raisins
  • 2 tablespoons butter
  • 3 tablespoons maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger

Recipe

  • 1 melt butter in a large non-stick skillet.
  • 2 combine the next 4 ingredients in the skillet and cover.
  • 3 cook over medium-high heat 20 minutes or until tender, stirring occasionally.
  • 4 stir in syrup, salt, and ginger.
