Pumpkin Raisin Muffins - Gluten Free

Ingredients
- 2 cups brown rice flour
- 1 cup tapioca starch
- 1/2 cup sorghum flour
- 1/2 cup arrowroot
- 1 teaspoon xanthan gum
- 2 tablespoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1 cup raisins
- 1 egg
- 1/4 cup egg
- 1/2 cup canola oil
- 1 cup brown sugar
- 1 cup orange juice
- 1 cup milk
- 1 1/2 cups pumpkin puree
Recipe
- 1 preheat the oven to 350°f.
- 2 mix the dry ingredients in a bowl including the raisins.
- 3 mix the wet ingredients in a separate bowl.
- 4 add the wet mix to the dry and stir until just moistened.
- 5 fill 24 muffin cups.
- 6 bake for 20 minutes or until the muffins are cooked through.
- 7 enjoy.
