Pumpkin Raisin Muffins - Gluten Free

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 2 cups brown rice flour
  • 1 cup tapioca starch
  • 1/2 cup sorghum flour
  • 1/2 cup arrowroot
  • 1 teaspoon xanthan gum
  • 2 tablespoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1 cup raisins
  • 1 egg
  • 1/4 cup egg
  • 1/2 cup canola oil
  • 1 cup brown sugar
  • 1 cup orange juice
  • 1 cup milk
  • 1 1/2 cups pumpkin puree

Recipe

  • 1 preheat the oven to 350°f.
  • 2 mix the dry ingredients in a bowl including the raisins.
  • 3 mix the wet ingredients in a separate bowl.
  • 4 add the wet mix to the dry and stir until just moistened.
  • 5 fill 24 muffin cups.
  • 6 bake for 20 minutes or until the muffins are cooked through.
  • 7 enjoy.
