Creamy Pumpkin Macaroni & Cheese

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 2 cups uncooked macaroni (1 standard box)
  • 1 cup 1% low-fat milk
  • 1/2 cup heavy cream
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon thyme
  • 1 dash sage
  • 2 cups cheddar cheese, shredded & divided

Recipe

  • 1 cook the macaroni according to package directions in salted water, until al dente. drain.
  • 2 in a large mixing bowl, mix the milk, cream, pumpkin, and spices together until perfectly blended.
  • 3 add 1 cup of shredded cheese to the mixture.
  • 4 pour in the macaroni and mix so that it's fully coated.
  • 5 pour into a 2-quart baking dish and top with the remaining cup of cheese.
  • 6 bake at 375f for 25-30 minutes or until golden brown on top.
