Harvest Pumpkin Spice French Toast

Total Time: 1 hr 15 mins Preparation Time: 45 mins Cook Time: 30 mins

Ingredients

  • 1 cup heavy cream, whipped
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 8 ounces whipped cream cheese
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 8 slices sturdy day-old pumpkin bread (1/2 inch thick slices)

Recipe

  • 1 using a hand mixer, mix the whipped cream, sugar, vanilla, cream cheese, and spices in a bowl; chill.
  • 2 in a pie pan or other shallow dish, whisk the eggs, milk, and salt together.
  • 3 soak bread slices in egg mixture for about 30 seconds on each side.
  • 4 heat a small frying pan sprayed with nonstick spray over medium heat.
  • 5 place soaked bread in pan and cover; cook for 2-3 minutes on each side, or until lightly browned.
  • 6 remove and let cool to slightly warm.
  • 7 place a bread slice on a plate and then spread a thick layer of cream cheese mixture on top.
  • 8 garnish with a little sprinkle of nutmeg or cinnamon.
