Harvest Time Pumpkin & Oatmeal Muffins

Total Time: 32 mins Preparation Time: 10 mins Cook Time: 22 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups all-purpose flour
  • 1 cup quick oats
  • 3/4 cup brown sugar, firmly packed
  • 1/2 cup raisins
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 cup canned pumpkin
  • 3/4 cup nonfat milk
  • 1/3 cup oil
  • 1 egg, lightly beaten

Recipe

  • 1 preheat oven to 400 degrees and line a 12-cup muffin tin with paper cases.
  • 2 combine dry ingredients in a large bowl.
  • 3 in another, medium bowl, combine the pumpkin, milk, oil and egg, blending well.
  • 4 stir pumpkin mixture into dry ingredients until the dry ingredients are just moist.
  • 5 fill muffin cases evenly and bake for 22-25 minutes.
