Ingredients

- 1 1/2 cups all-purpose flour
- 1 cup quick oats
- 3/4 cup brown sugar, firmly packed
- 1/2 cup raisins
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons pumpkin pie spice
- 1 cup canned pumpkin
- 3/4 cup nonfat milk
- 1/3 cup oil
- 1 egg, lightly beaten
Recipe
- 1 preheat oven to 400 degrees and line a 12-cup muffin tin with paper cases.
- 2 combine dry ingredients in a large bowl.
- 3 in another, medium bowl, combine the pumpkin, milk, oil and egg, blending well.
- 4 stir pumpkin mixture into dry ingredients until the dry ingredients are just moist.
- 5 fill muffin cases evenly and bake for 22-25 minutes.
