Gluten-free Pumpkin Nuggets

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 25
  • 1 cup amaranth flour
  • 1/2 cup garbanzo flour
  • 1/4 cup cornstarch
  • 1/4 cup tapioca starch
  • 1/4 cup potato starch
  • 2 1/2 teaspoons xanthan gum
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 eggs
  • 2 egg whites
  • 1/2 cup soymilk
  • 2 tablespoons vegetable oil
  • 2 tablespoons honey
  • 1 1/4 cups pumpkin puree

Recipe

  • 1 in a mixer, mix wet ingredients on low.
  • 2 add dry slowly.
  • 3 when just mixed, put into lightly greased pan. i used a loaf pan, just for the convenient size.
  • 4 bake for about an hour at 350°f
  • 5 cut in desired sized pieces when cooled.
