Pumpkin Pie Granola Bars

Ingredients

- 3 1/4 cups rolled oats
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup light brown sugar
- 1/2 cup pumpkin puree (canned pumpkin)
- 1/4 cup applesauce
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup dried cranberries
- 1/2 cup pecans, chopped
Recipe
- 1 preheat oven to 350 degrees f.
- 2 whisk together the oats, pumpkin pie spice, cinnamon and salt in a large mixing bowl.
- 3 in a separate bowl, whisk together the honey, brown sugar, pumpkin, applesauce and vanilla extract until smooth.
- 4 pour the wet mixture over the oats and mix with a wooden spoon.
- 5 stir in the cranberries and pecans.
- 6 pour and evenly press the mixture into a coated 8 x 8 pan.
- 7 bake for 35 to 40 minutes or until golden brown.
- 8 allow to cool, then cut into bars and serve. store at room temperature in an airtight container.
