Pan Cooked Pumpkin

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 40 g butter
  • 250 g bacon, diced
  • 1 garlic clove, crushed
  • 125 ml boiling water
  • 750 g butternut pumpkin, peeled, seeded, diced
  • 4 green onions, sliced
  • salt and pepper

Recipe

  • 1 melt 10 grams of butter in large fry pan.
  • 2 cook bacon and garlic till browned lightly.
  • 3 remove from pan, drain on paper towel.
  • 4 into the same pan, add boiling water and diced pumpkin.
  • 5 cover and cook 10 - 15 minutes till tender.
  • 6 return bacon mixture and cook uncovered for a further 10 minutes.
  • 7 add green onions and season to taste, toss gently.
