Pan Cooked Pumpkin

Ingredients
- Servings: 4
- 40 g butter
- 250 g bacon, diced
- 1 garlic clove, crushed
- 125 ml boiling water
- 750 g butternut pumpkin, peeled, seeded, diced
- 4 green onions, sliced
- salt and pepper
Recipe
- 1 melt 10 grams of butter in large fry pan.
- 2 cook bacon and garlic till browned lightly.
- 3 remove from pan, drain on paper towel.
- 4 into the same pan, add boiling water and diced pumpkin.
- 5 cover and cook 10 - 15 minutes till tender.
- 6 return bacon mixture and cook uncovered for a further 10 minutes.
- 7 add green onions and season to taste, toss gently.
