Pumpkin Pie Pancakes

Ingredients

  • Servings: 8
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 3/4 cup sugar
  • 1 1/2 cups cooked pumpkin, mashed
  • 3 eggs
  • 1 cup milk
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans, chopped, optional

Recipe

  • 1 in a medium-sized bowl, sift together the flour, baking powder, cinnamon, nutmeg, allspice, and sugar.
  • 2 in a large bowl, beat together the pumpkin, eggs, milk, oil, and vanilla.
  • 3 add the dry ingredients and blend thoroughly.
  • 4 pour 1/4 cup batter on a hot greased griddle.
  • 5 cook until the bottom is lightly browned and bubbles form.
  • 6 turn and finish cooking on other side.
  • 7 serve with hot syrup.
