Curried Pumpkin Soup Mmmm

Ingredients

- 1 small apple
- 1 tablespoon butter
- 1 small onion, sliced
- 1 stalk celery, sliced
- 1 large garlic clove, sliced
- 1 teaspoon grated fresh ginger
- 1 teaspoon curry powder
- 1 teaspoon garam masala
- 1/2 teaspoon cumin
- 1/2 teaspoon nutmeg
- 1 tablespoon all-purpose flour
- 3 cups chicken stock or 3 cups broth
- 1 cup pureed unsweetened pumpkin (i use canned)
- 400 ml unsweetened coconut milk
Recipe
- 1 peel, core and slice apple into small pieces.
- 2 melt butter in a large saucepan over medium heat.
- 3 add onion, celery and garlic; cook 5 minutes until softened.
- 4 stir in ginger, curry, garam masala and cumin.stir in flour; cook 1 minute.
- 5 atir in 3 cups broth. add pumpkin and apple. bring to a boil stirring occasionally. reduce heat to medium. cover and simmer for 20 minutes, stirring occasionally.
- 6 puree soup in a blender and add in the coconut milk and salt. if soup is too thick add more chicken stock.
- 7 pour back in saucepan, ladle into bowls and enjoy. keeps well in the fridge.
