Curried Pumpkin Soup Mmmm

Ingredients

  • Servings: 6
  • 1 small apple
  • 1 tablespoon butter
  • 1 small onion, sliced
  • 1 stalk celery, sliced
  • 1 large garlic clove, sliced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon curry powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin
  • 1/2 teaspoon nutmeg
  • 1 tablespoon all-purpose flour
  • 3 cups chicken stock or 3 cups broth
  • 1 cup pureed unsweetened pumpkin (i use canned)
  • 400 ml unsweetened coconut milk

Recipe

  • 1 peel, core and slice apple into small pieces.
  • 2 melt butter in a large saucepan over medium heat.
  • 3 add onion, celery and garlic; cook 5 minutes until softened.
  • 4 stir in ginger, curry, garam masala and cumin.stir in flour; cook 1 minute.
  • 5 atir in 3 cups broth. add pumpkin and apple. bring to a boil stirring occasionally. reduce heat to medium. cover and simmer for 20 minutes, stirring occasionally.
  • 6 puree soup in a blender and add in the coconut milk and salt. if soup is too thick add more chicken stock.
  • 7 pour back in saucepan, ladle into bowls and enjoy. keeps well in the fridge.
