Pasta With Pumpkin & Pesto

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 375 g pasta
  • 1 tablespoon oil
  • 1 onion, chopped
  • 2 cups pumpkin, cubed
  • 2 slices bacon, diced
  • 150 g pesto sauce
  • 375 ml evaporated milk
  • 1 -2 tablespoon cornflour
  • salt & pepper
  • toasted pine nuts (to garnish) (optional)
  • parmesan cheese (to garnish) (optional)

Recipe

  • 1 cook pasta according to pkt directions.
  • 2 whilst pasta is cooking, heat oil in a separate pan, add onion, bacon and pumpkin and cook for 2 minutes.
  • 3 add pesto sauce and combined evaporated milk and cornflour.
  • 4 bring to the boil stirring, simmer uncovered for approx 10 minutes if sauce thickens too much just add a little milk to bring it back to desired consistency.
  • 5 add salt and pepper to taste.
  • 6 stir drained pasta through sauce and serve garnished with toasted pine nuts and parmesan cheese.
