Pumpkin Pound Cake

Ingredients

  • Servings: 12
  • 2 1/2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1 (15 ounce) can solid-pack pumpkin
  • confectioners' sugar

Recipe

  • 1 in a mixing bowl, blend sugar and oil.
  • 2 add eggs, one at a time, beating well after each addition.
  • 3 combine flour, baking soda, cinnamon, nutmeg, salt and cloves; add to egg mixture alternately with pumpkin.
  • 4 transfer to a greased 12-cup fluted tube pan.
  • 5 bake at 350 for 60-65 minutes or until toothpick inserted near the center comes out clean.
  • 6 cool for 10 minutes before inverting onto a wire rack.
  • 7 remove pan and cool completely.
  • 8 dust with confectioners' sugar.
  • 9 yield: 12-16 servings.
