Rainbow Summer Salad With Mango

Ingredients

  • Servings: 6
  • 2 cups broccoli, chopped
  • 1 cup red pepper, diced
  • 1 cup orange bell pepper, diced
  • 1 mango, pitted and diced
  • 1 cup celery, diced
  • 1 cup carrot, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup pumpkin seeds (optional)
  • 1/2 cup mango chutney
  • 3 tablespoons olive oil
  • 1 teaspoon poppy seed
  • 2 tablespoons onions, finely diced
  • pepper

Recipe

  • 1 in a large bowl, combine all the salad ingredients.
  • 2 dressing: whisk together ingredients for the dressing. toss dressing with salad.
