Pumpkin-oatmeal Bread

Ingredients
- 2 cups whole wheat flour
- 1 cup rolled oats
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon baking powder
- 1 1/2 cups brown sugar
- 4 eggs
- 2 cups pumpkin puree, fresh if possible
- 2/3 cup vegetable oil
- 2 teaspoons vanilla
Recipe
- 1 preheat oven to 350. grease the bottoms of 2 loaf pans (8 1/2 x 4 1/2 x 2 1/2).
- 2 in a large mixing bowl, combine all of the dry ingredients, except the sugar.
- 3 in a smaller bowl, combine sugar and all of the wet ingredients. mix well until sugar is dissolved.
- 4 pour wet mixture into dry mixture. stir to combine, but don't over mix.
- 5 pour into prepared loaf pans.
- 6 bake 45-55 minutes, or until a test pick comes out clean.
- 7 cool in pans 5 minutes on cooling rack. then, remove from pans and cool completely -- if it lasts that long!
