Pumpkin-pecan Pancakes

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 3/4 cup sugar
  • 1 1/2 cups pumpkin puree
  • 3 eggs
  • 1 cup milk
  • 3/4 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1/2 cup chopped pecans
  • maple syrup, for serving

Recipe

  • 1 sift the flour, baking powder, cinnamon, nutmeg, allspice, and sugar together in a large bowl.
  • 2 in another bowl, combine the pumpkin, eggs, milk, oil, and vanilla.
  • 3 add the flour mixture to the pumpkin mixture and mix well.
  • 4 fold in the pecans.
  • 5 heat a greased griddle over med-high heat.
  • 6 using 1/4 cup of batter for each pancake, spoon the batter onto the griddle.
  • 7 cook the pancakes on the first side until bubbles form in the center and they are browned on the bottom.
  • 8 turn and brown the other side.
  • 9 serve hot with warmed maple syrup.
