Pumpkin-pecan Pancakes

Ingredients

- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 3/4 cup sugar
- 1 1/2 cups pumpkin puree
- 3 eggs
- 1 cup milk
- 3/4 cup vegetable oil
- 1 teaspoon pure vanilla extract
- 1/2 cup chopped pecans
- maple syrup, for serving
Recipe
- 1 sift the flour, baking powder, cinnamon, nutmeg, allspice, and sugar together in a large bowl.
- 2 in another bowl, combine the pumpkin, eggs, milk, oil, and vanilla.
- 3 add the flour mixture to the pumpkin mixture and mix well.
- 4 fold in the pecans.
- 5 heat a greased griddle over med-high heat.
- 6 using 1/4 cup of batter for each pancake, spoon the batter onto the griddle.
- 7 cook the pancakes on the first side until bubbles form in the center and they are browned on the bottom.
- 8 turn and brown the other side.
- 9 serve hot with warmed maple syrup.
