Pumpkin-wine Cookies With Glaze

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 3/4 cup walnuts
  • 3/4 cup raisins
  • 1/4 cup wine (originally used port, i prefer a blush)
  • 2/3 cup shortening
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 well beaten eggs
  • 1 cup pumpkin
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 2 tablespoons water
  • 1 1/2 cups powdered sugar
  • 2 tablespoons wine

Recipe

  • 1 soak nuts and raisins in wine for a few minutes.
  • 2 cream shortening and sugars together.
  • 3 stir in eggs and vanilla and wine mixture.
  • 4 add pumpkin (will curdle).
  • 5 sift together and add flour, baking powder, salt and spices.
  • 6 dough will be stiff.
  • 7 drop by teaspoon onto lightly greased cookie sheet.
  • 8 bake at 350°f for about 15 minutes.
  • 9 in a separate bowl, mix water, powdered sugar and wine.
  • 10 when cool, frost with glaze.
