Pumpkin Waffles

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 eggs
  • 2 tablespoons brown sugar
  • 1 cup half-and-half
  • 4 tablespoons butter, melted
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pumpkin pie spice
  • 1/2 cup canned pumpkin
  • 1/2 granny smith apple, peeled, cored, and diced
  • 1/2 cup walnuts, chopped

Recipe

  • 1 in a mixing bowl, whisk together eggs and brown sugar.
  • 2 add half-and-half and butter; whisk until well blended.
  • 3 in separate bowl, combine flour, baking powder, salt and pumpkin pie spice.
  • 4 add egg mixture and stir just until blended.
  • 5 stir in pumpkin; fold in apples and walnuts.
  • 6 spoon into preheated waffle iron according to manufacturer's directions.
  • 7 cook about 5 minutes or until waffles are brown and crisp.
  • 8 serve with butter and maple syrup.
