Curry Pumpkin Soup

Ingredients

  • Servings: 4
  • 1/2 lb pumpkin (hokkaido pumpkin preferable)
  • 2 teaspoons olive oil
  • 1 teaspoon fresh ginger (grated)
  • 2 teaspoons curry powder
  • 1 onion, chopped
  • 2 garlic cloves
  • 2 medium potatoes (for boiling)
  • 1 cup coconut milk
  • 3 cups vegetable broth
  • salt (to taste)
  • pepper (to taste)

Recipe

  • 1 add olive oil to pot and sautee the ginger, curyr powder, onion, and garlic for a 2-3 minutes. add pumpkin, potatoes, coconut milk, and vegetable broth and cook on medium heat for 30 minutes (or until pumpkin and potatoes are tender). blend with a handblender and serve.
