Ingredients
- Servings: 4
- 1/2 lb pumpkin (hokkaido pumpkin preferable)
- 2 teaspoons olive oil
- 1 teaspoon fresh ginger (grated)
- 2 teaspoons curry powder
- 1 onion, chopped
- 2 garlic cloves
- 2 medium potatoes (for boiling)
- 1 cup coconut milk
- 3 cups vegetable broth
- salt (to taste)
- pepper (to taste)
Recipe
- 1 add olive oil to pot and sautee the ginger, curyr powder, onion, and garlic for a 2-3 minutes. add pumpkin, potatoes, coconut milk, and vegetable broth and cook on medium heat for 30 minutes (or until pumpkin and potatoes are tender). blend with a handblender and serve.
