Pumpkin With Walnuts

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 small pumpkin (2 lbs)
  • 1 cup shelled walnuts
  • 1/3 cup sugar

Recipe

  • 1 slice the pumpkin in half and remove the stringy fibers and seeds.
  • 2 peel and cut the pumpkin into chunks about 1x2 inches.
  • 3 boil in salted water until tender, about 12-15 minutes.
  • 4 finely grind the walnuts with the sugar.
  • 5 place the pumpkin pieces in a bowl and mash to break them up slightly, but still chunky stir in walnut-sugar mixture.
  • 6 serve hot or cold.
