Pumpkin-bran Muffins

Ingredients
- 1 cup flour
- 2 tablespoons vegetable oil
- 1/2 cup natural bran
- 1/2 cup pumpkin, canned or cooked
- 1 tablespoon sugar
- 1 egg
- 2 teaspoons baking powder
- 3/4 cup orange juice
- 1/2 teaspoon baking soda
- 1/3 cup raisins
- 1/2 teaspoon ground cinnamon
- 1 tablespoon wheat germ
Recipe
- 1 combine all the ingredients, except the wheat germ, in a mixing bowl.
- 2 stir to blend.
- 3 spoon into lightly oiled muffin tins (or paper baking cups sprayed with non-stick spray, my choice.) sprinkle on the wheat germ.
- 4 bake in a 400 degree oven for 10 to 15 minutes or until lightly browned.
