Pumpkin-bran Muffins

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 cup flour
  • 2 tablespoons vegetable oil
  • 1/2 cup natural bran
  • 1/2 cup pumpkin, canned or cooked
  • 1 tablespoon sugar
  • 1 egg
  • 2 teaspoons baking powder
  • 3/4 cup orange juice
  • 1/2 teaspoon baking soda
  • 1/3 cup raisins
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon wheat germ

Recipe

  • 1 combine all the ingredients, except the wheat germ, in a mixing bowl.
  • 2 stir to blend.
  • 3 spoon into lightly oiled muffin tins (or paper baking cups sprayed with non-stick spray, my choice.) sprinkle on the wheat germ.
  • 4 bake in a 400 degree oven for 10 to 15 minutes or until lightly browned.
