Pumpkin, Pear, And Cranberry Gratin

Ingredients

  • Servings: 6
  • 4 cups cubed peeled fresh pumpkin (1/2 inch cubes)
  • 2 cups finely chopped peeled pears
  • 1 teaspoon grated orange rind
  • 1/2 cup fresh orange juice
  • 3 tablespoons dried sweetened cranberries
  • 2 tablespoons brown sugar
  • 1 teaspoon grated peeled fresh ginger
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 slices bread
  • 1/2 cup shredded reduced-fat sharp cheddar cheese
  • 1 tablespoon butter, melted

Recipe

  • 1 steam pumpkin, covered, for 10 minutes or until tender; drain.
