Pumpkin, Leeks And Turnips

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 3
  • 1 small turnip, peeled and thinly sliced
  • 1 small pumpkin or 1 small squash, peeled and thinly sliced
  • 2 leeks, bits sliced
  • 2 tablespoons olive oil
  • 2 tablespoons sesame seeds
  • salt and pepper, to taste

Recipe

  • 1 heat the oven to 200°c.
  • 2 put the pumpkin on a sheet of foil and bring the foil over the top of the pumpkin to create a sealed packet.
  • 3 put on a tray and bake for 1/2 hour.
  • 4 about 10 minutes before the pumpkin is done, heat the oil in a pan and add the leeks and pumpkin.
  • 5 fry until the turnip is tender, adding a bit of water from time to time if necessary to keep the pan from drying out too much.
  • 6 add the baked pumpkin slices to the pan and cook a couple more minutes.
  • 7 season, then put in a bowl, sprinkle over the sesame seeds and serve.
