Paleo Pumpkin Granola

Ingredients

- 1/2 cup sliced almonds
- 1/2 cup pumpkin seeds
- 1/2 cup pecans, chopped
- 8 dates, chopped
- 1/2 cup pumpkin puree
- 1/2 cup coconut oil
- 1/3 cup shredded coconut
- 1/3 cup honey
- 1 teaspoon vanilla
- 2 tablespoons cinnamon
- 1 tablespoon nutmeg
- 1/8 teaspoon clove
- 1/8 teaspoon ginger
Recipe
- 1 preheat oven 325 degrees.
- 2 mix wet ingredients: pumpkin puree, coconut oil, honey, vanilla & spices.
- 3 add dry: nuts & dates.
- 4 spread evenly onto parchment covered baking sheet.
- 5 bake for 30 - 40 minutes - mix half way through.
- 6 let cool --> will get crunchy when cool.
- 7 snack directly or serve with almond milk as a cereal.
