Paleo Pumpkin Granola

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1/2 cup sliced almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup pecans, chopped
  • 8 dates, chopped
  • 1/2 cup pumpkin puree
  • 1/2 cup coconut oil
  • 1/3 cup shredded coconut
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 2 tablespoons cinnamon
  • 1 tablespoon nutmeg
  • 1/8 teaspoon clove
  • 1/8 teaspoon ginger

Recipe

  • 1 preheat oven 325 degrees.
  • 2 mix wet ingredients: pumpkin puree, coconut oil, honey, vanilla & spices.
  • 3 add dry: nuts & dates.
  • 4 spread evenly onto parchment covered baking sheet.
  • 5 bake for 30 - 40 minutes - mix half way through.
  • 6 let cool --> will get crunchy when cool.
  • 7 snack directly or serve with almond milk as a cereal.
