Cherry Marmalade Muffins

Ingredients

- 2 cups self rising flour
- 1 teaspoon pumpkin pie spice
- 1/2 cup sugar
- 1/2 cup glace cherries, quartered
- 2 tablespoons orange marmalade
- 2/3 cup milk
- 4 tablespoons margarine
- marmalade to glaze
Recipe
- 1 preheat oven to 400.
- 2 lightly grease 12 muffin cups with oil.
- 3 sift together the flour and spice, then stir in the sugar and glace cherries.
- 4 mix the marmalade with the milk and beat into the dry ingredients with the margarine.
- 5 spoon into the greased cups.
- 6 bake 20-25 minutes, until golden brown and firm.
- 7 turn out onto a wire rack and brush to tops with warmed marmalade. serve hot.
