Cherry Marmalade Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 2 cups self rising flour
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup sugar
  • 1/2 cup glace cherries, quartered
  • 2 tablespoons orange marmalade
  • 2/3 cup milk
  • 4 tablespoons margarine
  • marmalade to glaze

Recipe

  • 1 preheat oven to 400.
  • 2 lightly grease 12 muffin cups with oil.
  • 3 sift together the flour and spice, then stir in the sugar and glace cherries.
  • 4 mix the marmalade with the milk and beat into the dry ingredients with the margarine.
  • 5 spoon into the greased cups.
  • 6 bake 20-25 minutes, until golden brown and firm.
  • 7 turn out onto a wire rack and brush to tops with warmed marmalade. serve hot.
