Mashed Pumpkin And Apples

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 2 tablespoons dried sweetened cranberries
  • 3 lbs sugar pumpkin or 3 lbs butternut squash, cut in half,with seeds and strings removed
  • 3 large golden delicious apples, halved and cored (about 1 1/2 pounds)
  • 1/4 cup butter, cut into small pieces
  • 2 teaspoons freshly grated lemons, rind of
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 put cranberries in small bowl and add 1 cup boiling water and let soak.
  • 2 preheat oven to 400 degrees f.
  • 3 coat a baking sheet with cooking spray and place pumpkin and apples cut side down on sheet.
  • 4 bake 40 minutes or until pumpkin is fork tender and apples are very soft.
  • 5 let cool to room temperature.
  • 6 scoop pumpkin and apple pulp into large bowl.
  • 7 add butter, lemon peel, salt and pepper and mash with a potato masher or beat with a mixer.
  • 8 spoon into a serving dish and reheat in microwave if needed.
  • 9 drain cranberries and sprinkle on top.
