Pumpkin Black Bean Turkey Chili

Ingredients

- 2 tablespoons vegetable oil
- 1 cup chopped onion
- 1 cup chopped yellow bell pepper
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 1/2 teaspoons ground cumin
- 1 -2 tablespoon chili powder
- 2 (15 ounce) cans black beans, rinsed and drained
- 3 cups chopped cooked turkey
- 1 (16 ounce) can pumpkin
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 3 cups chicken broth
- 1/2 cup cream sherry
- salt and pepper
Recipe
- 1 in a large dutch oven, heat oil over medium heat.
- 2 add the onion, yellow bell pepper, and garlic; stir and cook for about 8 minutes or until soft.
- 3 add in oregano, cumin, and chili powder.
- 4 cook and stir 1 minute.
- 5 add in black beans, turkey, pumpkin, tomatoes with liquid, broth, sherry, and salt/pepper to taste.
- 6 bring mixture to a boil; stir occasionally.
- 7 lower heat, cover and simmer for 45 minutes.
- 8 serve hot.
