Pumpkin Black Bean Turkey Chili

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil
  • 1 cup chopped onion
  • 1 cup chopped yellow bell pepper
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 1/2 teaspoons ground cumin
  • 1 -2 tablespoon chili powder
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 3 cups chopped cooked turkey
  • 1 (16 ounce) can pumpkin
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 3 cups chicken broth
  • 1/2 cup cream sherry
  • salt and pepper

Recipe

  • 1 in a large dutch oven, heat oil over medium heat.
  • 2 add the onion, yellow bell pepper, and garlic; stir and cook for about 8 minutes or until soft.
  • 3 add in oregano, cumin, and chili powder.
  • 4 cook and stir 1 minute.
  • 5 add in black beans, turkey, pumpkin, tomatoes with liquid, broth, sherry, and salt/pepper to taste.
  • 6 bring mixture to a boil; stir occasionally.
  • 7 lower heat, cover and simmer for 45 minutes.
  • 8 serve hot.
