Pumpkin Cheesecake Bars

Total Time: 1 hr 10 mins Preparation Time: 25 mins Cook Time: 45 mins

Ingredients

  • 1 cup flour
  • 1/3 cup light brown sugar, packed
  • 5 tablespoons butter
  • 1/2 cup pecans or 1/2 cup walnuts, finely chopped
  • 1 (8 ounce) package cream cheese, softened
  • 3/4 cup sugar
  • 1/2 cup canned pumpkin puree
  • 2 eggs
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon vanilla

Recipe

  • 1 preheat oven to 350°f.
  • 2 combine flour and brown sugar.
  • 3 add butter and cut in until well distributed and crumbly.
  • 4 reserve 3/4 cup of the mixture and spread the rest in the bottom of an 8x8 inch baking pan, pressing down to compact.
  • 5 place in oven and bake for 15 minutes, then cool slightly.
  • 6 combine the rest of the ingredients and beat until smooth.
  • 7 pour over the crust and sprinkle with the reserved crumb mixture.
  • 8 return to oven and bake for another 30-35 minutes.
  • 9 allow to cool before cutting into bars.
