Pumpkin Pie

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • pastry dough, for 9 inch one-crust pie
  • 2 eggs
  • 16 ounces pumpkin puree or 2 cups cooked pumpkin
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 2/3 cups evaporated milk

Recipe

  • 1 heat oven to 425.
  • 2 prepare pastry.
  • 3 beat eggs slightly with hand beater.
  • 4 beat in remaining ingredients.
  • 5 place pastry-lined pie plate on oven rack and pour in filling.
  • 6 bake 15 minutes.
  • 7 reduce oven temperature to 350.
  • 8 bake until knife inserted in center comes out clean (8" pie 35 minutes longer, 9" pie 45 minutes longer).
  • 9 cool and serve with whipped cream.
