Pumpkin Pie

Ingredients
- pastry dough, for 9 inch one-crust pie
- 2 eggs
- 16 ounces pumpkin puree or 2 cups cooked pumpkin
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 2/3 cups evaporated milk
Recipe
- 1 heat oven to 425.
- 2 prepare pastry.
- 3 beat eggs slightly with hand beater.
- 4 beat in remaining ingredients.
- 5 place pastry-lined pie plate on oven rack and pour in filling.
- 6 bake 15 minutes.
- 7 reduce oven temperature to 350.
- 8 bake until knife inserted in center comes out clean (8" pie 35 minutes longer, 9" pie 45 minutes longer).
- 9 cool and serve with whipped cream.
