Pumpkin Protein Muffins

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/3 cup spiru tein protein powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 (15 ounce) can pumpkin
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1 teaspoon vanilla

Recipe

  • 1 preheat the oven to 350 degrees.
  • 2 line a muffin tin with muffin papers.
  • 3 in a large bowl mix together the dry ingredients: flour, sugar, protein powder, baking powder, baking soda, salt, and cinnamon.
  • 4 add the pumpkin, eggs, oil, and water. mix until just combined.
  • 5 fill muffin cups 3/4 full. bake for 25-30 minutes, until center springs back.
