Pumpkin Pie (vegan!)

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 10 -14 ounces firm silken tofu
  • 8 ounces vegan cream cheese (sometimes it's at the market, usually have to go to the health food store)
  • 1 cup canned pumpkin (not the pie mix, i suggest libby's)
  • 1 cup sugar
  • 3 tablespoons flour
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 2 teaspoons cinnamon (maybe 1-1/2)
  • 1/4 teaspoon salt (anywhere from 1/8-1/4)
  • 1/4 teaspoon baking soda
  • 1 pie crust

Recipe

  • 1 preheat oven to 350°f.
  • 2 put all of the ingredients in a food processor/blender and blend until desired texture is reached.
  • 3 pour mixture into pie crust.
  • 4 bake for 45-50 minutes.
  • 5 let it cool for about 20-30 minutes.
  • 6 serve or cover and store in refrigerator.
