Healthy Harvest Muffins

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 1/2 cups brown sugar
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 cup pumpkin
  • 1 3/4 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/3 cup water
  • 1/4 cup raisins
  • 1 cup shredded carrot

Recipe

  • 1 combine sugar and applesauce.
  • 2 add eggs and pumpkin.
  • 3 sift together dry ingredients and add alternately to pumpkin mixture with water.
  • 4 fold in raisins and carrots.
  • 5 spoon into lined muffin tins and bake at 350 degrees for 30 minutes, or until a toothpick inserted into the middles comes out clean.
