Protein Pumpkin Muffins

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1 cup oats, dry
  • 2 scoops whey protein powder (1 servings worth)
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 egg whites
  • 1/2 cup canned pumpkin
  • 1/4 cup applesauce, unsweetened
  • stevia (sugar-fee sweetener of choice) or splenda sugar substitute (sugar-fee sweetener of choice)

Recipe

  • 1 preheat oven to 350.
  • 2 mix dry ingredients in bowl.
  • 3 mix wet ingredients in a separate bowl.
  • 4 combine dry and wet ingredients, blend well.
  • 5 pour into muffin tins and bake for 10 minutes.
