Pumpkin Cake

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 1 (18 1/4 ounce) box yellow cake mix
  • 3 egg whites
  • 1 cup canned pumpkin
  • 1 cup orange juice
  • 1/2 cup nonfat sour cream
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 1/4 cups powdered sugar, sifted
  • 1/4 teaspoon vanilla
  • water

Recipe

  • 1 mix together all the cake ingredients for 2 minutes.
  • 2 pour into a bundt pan coated with cooking spray.
  • 3 bake 35 to 40 minutes at 350 degrees.
  • 4 cool.
  • 5 glaze: mix together the powdered sugar and vanilla.
  • 6 add water, one tablespoon at a time, to get a runny consistency.
  • 7 drizzle over the warm cake.
