Healthy Pumpkin Pie

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 1 ready-made pie crust, reduced fat
  • 16 ounces pumpkin puree
  • 12 ounces fat-free evaporated milk
  • 3 eggs
  • 3/4 cup splenda sugar substitute
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves

Recipe

  • 1 pre heat oven to 425°f.
  • 2 roll pastry on floured surface into circle one inch larger than inverted 9-inch pie pan.
  • 3 place in pan. trim and flute edge.
  • 4 beat pumpkin, evaporated milk and eggs in large bowl.
  • 5 beat in remaining ingredients.
  • 6 pour into pastry shell.
  • 7 bake at 425f for 15 minutes.
  • 8 reduce heat to 350f and bake another 30-40 minutes.
  • 9 pie is done when an knife inserted near center comes out clean.
  • 10 cool on wire rack.
