Healthy Pumpkin Muffins

Total Time: 28 mins Preparation Time: 10 mins Cook Time: 18 mins

Ingredients

  • Servings: 12
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 4 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ginger
  • nutmeg
  • cardamom
  • 1/4 teaspoon baking soda
  • 2 egg whites
  • 3/4 cup skim milk
  • 1 tablespoon oil
  • 1/2 cup canned pumpkin
  • 2 tablespoons brown sugar
  • 2 tablespoons oatmeal

Recipe

  • 1 preheat oven to 375°f.
  • 2 spray 12-cup muffin pan with cooking spray.
  • 3 stir together flours, sugar, spices, baking powder and soda.
  • 4 in a separate bowl stir together milk, egg , oil, and pumpkin.
  • 5 add wet ingredients to dry and stir just until mixed.
  • 6 pour into muffin cups.
  • 7 stir together topping ingredients and sprinkle over muffins.
  • 8 bake 15-18 minutes.
