Healthy Pumpkin Muffins

Ingredients

- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 4 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ginger
- nutmeg
- cardamom
- 1/4 teaspoon baking soda
- 2 egg whites
- 3/4 cup skim milk
- 1 tablespoon oil
- 1/2 cup canned pumpkin
- 2 tablespoons brown sugar
- 2 tablespoons oatmeal
Recipe
- 1 preheat oven to 375°f.
- 2 spray 12-cup muffin pan with cooking spray.
- 3 stir together flours, sugar, spices, baking powder and soda.
- 4 in a separate bowl stir together milk, egg , oil, and pumpkin.
- 5 add wet ingredients to dry and stir just until mixed.
- 6 pour into muffin cups.
- 7 stir together topping ingredients and sprinkle over muffins.
- 8 bake 15-18 minutes.
