Healthy Pumpkin Cake

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 8 ounces pumpkin
  • 1 cup splenda granular
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon pumpkin spice
  • 1/4 teaspoon salt
  • 4 ounces fat free cream cheese
  • 3 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup confectioners' sugar

Recipe

  • 1 cake: in a mixing bowl, beat pumpkin, sugar, and applesauce.
  • 2 add eggs, and mix well.
  • 3 in another bowl, combine flour, baking soda, powder, spices and salt.
  • 4 add these dry ingredients to the pumpkin mixture, and beat until well blended.
  • 5 pour batter into a greased 8x5 inch baking pan.
  • 6 bake at 350 degrees f for 25 to 30 minutes, or until cake tests done.
  • 7 cool & frost.
  • 8 frosting: mix well until smooth.
