Healthy Pumpkin Cake

Ingredients

- 8 ounces pumpkin
- 1 cup splenda granular
- 1/2 cup unsweetened applesauce
- 2 eggs
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon ground cinnamon
- 1 teaspoon pumpkin spice
- 1/4 teaspoon salt
- 4 ounces fat free cream cheese
- 3 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 1 cup confectioners' sugar
Recipe
- 1 cake: in a mixing bowl, beat pumpkin, sugar, and applesauce.
- 2 add eggs, and mix well.
- 3 in another bowl, combine flour, baking soda, powder, spices and salt.
- 4 add these dry ingredients to the pumpkin mixture, and beat until well blended.
- 5 pour batter into a greased 8x5 inch baking pan.
- 6 bake at 350 degrees f for 25 to 30 minutes, or until cake tests done.
- 7 cool & frost.
- 8 frosting: mix well until smooth.
