Healthy Pumpkin Belgian Waffles

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 3 cups bisquick
  • 2 cups whole wheat pastry flour
  • 2 tablespoons brown sugar
  • 2 1/2 tablespoons pumpkin pie spice
  • 1 (15 ounce) can pumpkin puree
  • 2 1/2 cups skim milk
  • 1/4 cup applesauce
  • 1/4 cup vegetable oil
  • 1 cup egg beaters egg substitute
  • 1/3 cup wheat germ (optional)
  • 3 tablespoons ground flax seeds (optional)
  • 1/2 cup walnuts, chopped (optional)

Recipe

  • 1 preheat belgium waffle machine.
  • 2 combine dry ingredients in large mixing bowl or stand mixer.
  • 3 make a well in the center, and add in remaining wet ingredients.
  • 4 mix in walnuts, if using.
  • 5 (add up to another 1/2 cup of milk if your batter appears particularly thick).
  • 6 pour batter into waffle iron per your units' instructions.
  • 7 enjoy!
