Healthy Pumpkin Belgian Waffles

Ingredients

- 3 cups bisquick
- 2 cups whole wheat pastry flour
- 2 tablespoons brown sugar
- 2 1/2 tablespoons pumpkin pie spice
- 1 (15 ounce) can pumpkin puree
- 2 1/2 cups skim milk
- 1/4 cup applesauce
- 1/4 cup vegetable oil
- 1 cup egg beaters egg substitute
- 1/3 cup wheat germ (optional)
- 3 tablespoons ground flax seeds (optional)
- 1/2 cup walnuts, chopped (optional)
Recipe
- 1 preheat belgium waffle machine.
- 2 combine dry ingredients in large mixing bowl or stand mixer.
- 3 make a well in the center, and add in remaining wet ingredients.
- 4 mix in walnuts, if using.
- 5 (add up to another 1/2 cup of milk if your batter appears particularly thick).
- 6 pour batter into waffle iron per your units' instructions.
- 7 enjoy!
