Quick Sweet Pumpkin Pie

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 1/2 sheets shortcrust pastry
  • 1/4 cup caster sugar
  • 1/4 cup maple syrup
  • 3 eggs
  • 1 cup cooked pumpkin, mashed
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Recipe

  • 1 preheat oven to 180 degrees celsius.
  • 2 line flan tin with pastry.
  • 3 bake blind 10 minutes. set aside.
  • 4 mix sugar and maple syrup until smooth, then add eggs one at a time stirring until well combined.
  • 5 add pumpkin and spices and mix well.
  • 6 pour into pastry and return to oven for 20 -25 minutes.
