Quick Sweet Pumpkin Pie

- 1 1/2 sheets shortcrust pastry
- 1/4 cup caster sugar
- 1/4 cup maple syrup
- 3 eggs
- 1 cup cooked pumpkin, mashed
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Recipe
- 1 preheat oven to 180 degrees celsius.
- 2 line flan tin with pastry.
- 3 bake blind 10 minutes. set aside.
- 4 mix sugar and maple syrup until smooth, then add eggs one at a time stirring until well combined.
- 5 add pumpkin and spices and mix well.
- 6 pour into pastry and return to oven for 20 -25 minutes.
