Eggnog Martini

Total Time: 1 hr 15 mins Preparation Time: 1 hr Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1 teaspoon freshly grated nutmeg
  • 1 teaspoon pumpkin pie spice, plus more for garnish
  • 8 cups whole milk, divided
  • 6 large egg yolks
  • 3 cups brandy

Recipe

  • 1 place a mesh strainer in a large non-glass bowl set in an ice water bath. set aside.
  • 2 in a medium saucepan, off heat, stir together sugar, cornstarch and spices. whisk in 4 cups cold milk, being sure to dissolve cornstarch. whisk in egg yolks.
  • 3 over medium heat, whisk constantly until large bubbles start to form, 10-12 minutes. reduce heat to low and cook 1 minute more, still whisking constantly.
  • 4 remove from heat and pour through sieve into bowl. whisk in remaining cold milk. allow to remain in ice bath until fully cold.
  • 5 stir in brandy just before serving. serve in martini glasses garnished with a pinch of pumpkin pie spice.
