Eggnog Martini

Ingredients

- 1 cup sugar
- 1/4 cup cornstarch
- 1 teaspoon freshly grated nutmeg
- 1 teaspoon pumpkin pie spice, plus more for garnish
- 8 cups whole milk, divided
- 6 large egg yolks
- 3 cups brandy
Recipe
- 1 place a mesh strainer in a large non-glass bowl set in an ice water bath. set aside.
- 2 in a medium saucepan, off heat, stir together sugar, cornstarch and spices. whisk in 4 cups cold milk, being sure to dissolve cornstarch. whisk in egg yolks.
- 3 over medium heat, whisk constantly until large bubbles start to form, 10-12 minutes. reduce heat to low and cook 1 minute more, still whisking constantly.
- 4 remove from heat and pour through sieve into bowl. whisk in remaining cold milk. allow to remain in ice bath until fully cold.
- 5 stir in brandy just before serving. serve in martini glasses garnished with a pinch of pumpkin pie spice.
