Healthy Pumpkin Pancakes

Ingredients
- 1/2 cup fiber one pancake mix
- 1/4 cup canned pumpkin
- 3/4 cup water (for thicker pancakes, use less water)
- 1 1/2 teaspoons vanilla extract
- 1 1/2 teaspoons pumpkin pie spice
- 1 1/2 teaspoons cinnamon
- 1/4 cup sugar-free syrup, like cary's
- cooking spray
Recipe
- 1 combine the pancake mix, pumpkin pie spice, and cinnamon together in a small bowl.
- 2 add the water, vanilla, and pumpkin puree to the dry ingredients, and mix well.
- 3 coat the griddle (or a frying pan) with the cooking spray, then place over medium heat. let the pan heat for 2 minutes.
- 4 pour pancake mix onto griddle to make 4 pancakes. when the edges harden and bubbles surface, turn the pancakes over until done.
- 5 serve with sugar-free syrup, and enjoy!
