Healthy Pumpkin Pancakes

Ingredients

  • 1/2 cup fiber one pancake mix
  • 1/4 cup canned pumpkin
  • 3/4 cup water (for thicker pancakes, use less water)
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 1/2 teaspoons cinnamon
  • 1/4 cup sugar-free syrup, like cary's
  • cooking spray

Recipe

  • 1 combine the pancake mix, pumpkin pie spice, and cinnamon together in a small bowl.
  • 2 add the water, vanilla, and pumpkin puree to the dry ingredients, and mix well.
  • 3 coat the griddle (or a frying pan) with the cooking spray, then place over medium heat. let the pan heat for 2 minutes.
  • 4 pour pancake mix onto griddle to make 4 pancakes. when the edges harden and bubbles surface, turn the pancakes over until done.
  • 5 serve with sugar-free syrup, and enjoy!
