Rhonda's Pumpkin Bread

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • 3 1/2 cups flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 3 cups sugar
  • 2/3 cup water (less for fresh pumpkin)
  • 2 cups pumpkin puree
  • 4 eggs
  • 1 cup salad oil (canola oil)

Recipe

  • 1 sift dry ingredients into larger bowl.
  • 2 combine salad oil, eggs, pumpkin, water in other bowl.
  • 3 add to dry ingredients.
  • 4 mix thoroughly.
  • 5 pour into two greased and floured loaf pans.
  • 6 bake at 325 degrees f for 1-1.5 hours. may add 1 cup chopped nuts.
