Lighter Pumpkin Chip Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 24
  • 2 eggs
  • 1 egg
  • 1/4 cup oil
  • 1 cup unsweetened applesauce
  • 1 (16 ounce) can pumpkin
  • 1/2 cup sugar
  • 1 cup all-purpose flour
  • 2 cups whole wheat flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon salt
  • 8 ounces semi-sweet chocolate chips
  • 1/4 cup oats

Recipe

  • 1 1. mix first 5 ingredients together,
  • 2 2. separately, mix dry ingredients.
  • 3 3. blend the two mixutres, fold in chips.
  • 4 4. generoously fill 24 greased(non stick cooking spray) or paper-lined muffin cups. sprinkle oats on top.
  • 5 4 bake at 400 degrees f. for 16-20 minute.
