Lighter Pumpkin Chip Muffins

Ingredients

- 2 eggs
- 1 egg
- 1/4 cup oil
- 1 cup unsweetened applesauce
- 1 (16 ounce) can pumpkin
- 1/2 cup sugar
- 1 cup all-purpose flour
- 2 cups whole wheat flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 teaspoons pumpkin pie spice
- 1 teaspoon salt
- 8 ounces semi-sweet chocolate chips
- 1/4 cup oats
Recipe
- 1 1. mix first 5 ingredients together,
- 2 2. separately, mix dry ingredients.
- 3 3. blend the two mixutres, fold in chips.
- 4 4. generoously fill 24 greased(non stick cooking spray) or paper-lined muffin cups. sprinkle oats on top.
- 5 4 bake at 400 degrees f. for 16-20 minute.
