Lighter Pumpkin Chocolate Chip Cookies

Ingredients
- 1 cup smart balance butter spread
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/4 cup egg substitute
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 cup whole wheat flour
- 1 cup oatmeal
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup pumpkin
- 3/4 cup mini chocolate chip
Recipe
- 1 in a mixing bowl cream together butter and sugars. add egg and vanilla, beat to mix.
- 2 in another bowl mix flours, oatmeal, soda, salt, and cinnamon.
- 3 add flour mixture to sugar mixture slowly, alternating with adding pumpkin. mix well.
- 4 fold in chocolate chips.
- 5 drop by tablespoonfuls onto greased cookie sheet. bake at 350 for 12-13 minutes or until lightly browned.
