Lighter Pumpkin Chocolate Chip Cookies

Ingredients

  • 1 cup smart balance butter spread
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/4 cup egg substitute
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1 cup whole wheat flour
  • 1 cup oatmeal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup pumpkin
  • 3/4 cup mini chocolate chip

Recipe

  • 1 in a mixing bowl cream together butter and sugars. add egg and vanilla, beat to mix.
  • 2 in another bowl mix flours, oatmeal, soda, salt, and cinnamon.
  • 3 add flour mixture to sugar mixture slowly, alternating with adding pumpkin. mix well.
  • 4 fold in chocolate chips.
  • 5 drop by tablespoonfuls onto greased cookie sheet. bake at 350 for 12-13 minutes or until lightly browned.
