Pumpkin Cake Bars

Ingredients
- 2 cups sugar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 3/4 cup corn oil
- 2 cups cooked mashed pumpkin or 1 (16 ounce) can pumpkin
- 4 eggs
- 1 (3 ounce) package cream cheese, softened
- 6 tablespoons margarine, softened
- 1 tablespoon orange juice
- 1 teaspoon vanilla
- 1 3/4 cups sifted powdered sugar
Recipe
- 1 combine first 6 ingredients.
- 2 add oil, pumpkin and eggs; beat 1 minute at medium speed of electric mixer.
- 3 spoon batter into a greased 15x10x1 inch jellyroll pan.
- 4 bake at 350 degrees for 20 to 25 minutes.
- 5 cool completely; frost with fluffy cream cheese frosting.
- 6 cut into bars.
- 7 fluffy cream cheese frosting: beat cream cheese and margarine until light and fluffy; add orange juice and vanilla and mix well.
- 8 gradually add powdered sugar, mixing until light and fluffy.
