Cinnamon Spiced Pumpkin Soup

Ingredients

  • Servings: 4
  • 4 cups pumpkin, cubes
  • 2 cups half-and-half
  • 1 -2 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • snipped chives, as garnish

Recipe

  • 1 cook pumpkin in medium saucepan in 1 inch of simmering water until tender, about 15 minutes. drain well.
  • 2 process pumpkin and half and half in food processor or blender. return to saucepan.
  • 3 heat to just boiling. stir in brown sugar and spices. simmer for 5 minutes. serve sprinkled with chives.
