Low-fat Pumpkin Pancakes

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 1/4 cups whole wheat flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1 cup unsweetened soymilk
  • 6 tablespoons pumpkin puree
  • 2 tablespoons unsweetened applesauce
  • 1 egg

Recipe

  • 1 whisk dry and wet ingredients separately.
  • 2 fold wet ingredients into dry
  • 3 spray nonstick pan with olive oil spray.
  • 4 pour in 1/3 cup batter for each pancake.
  • 5 cook pancakes about three minutes per side.
  • 6 serve with butter and syrup.
