Haupia Pumpkin Pie

Ingredients

  • 1 (16 ounce) can pumpkin puree
  • 2 eggs, slightly beaten
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1 (13 ounce) can evaporated milk
  • 1 1/2 cups shredded coconut, divided (1 cup and 1/2 cup)
  • 1 (9 inch) unbaked pie shells
  • 1 (2 1/2 ounce) package haupia pudding mix
  • 1 cup heavy cream, whipped and sweetened

Recipe

  • 1 preheat oven to 425 degrees f.
