Haupia Pumpkin Pie

Ingredients

- 1 (16 ounce) can pumpkin puree
- 2 eggs, slightly beaten
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cloves
- 1 (13 ounce) can evaporated milk
- 1 1/2 cups shredded coconut, divided (1 cup and 1/2 cup)
- 1 (9 inch) unbaked pie shells
- 1 (2 1/2 ounce) package haupia pudding mix
- 1 cup heavy cream, whipped and sweetened
Recipe
- 1 preheat oven to 425 degrees f.
