Magic Pumpkin Buckle

Total Time: 1 hr 10 mins Preparation Time: 15 mins Cook Time: 55 mins

Ingredients

  • 1/2 cup butter or 1/2 cup margarine, melted
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 3 cups canned pumpkin
  • 1 cup evaporated milk
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon clove
  • 1/4 teaspoon nutmeg
  • 1 tablespoon butter or 1 tablespoon margarine
  • 2 tablespoons sugar

Recipe

  • 1 pour butter or margarine in a 13 inch x 9 inch x 2 inch baking dish.
  • 2 set aside.
  • 3 in a bowl, combine the flour, sugar, baking powder and salt.
  • 4 stir in milk and vanilla until smooth.
  • 5 pour into the prepared pan.
  • 6 in a mixing bowl, beat the pumpkin, milk and eggs.
  • 7 combine the remaining filling iingredients.
  • 8 add to pumpkin mixture.
  • 9 pour over crust mixture. ( do not stir).
  • 10 dot with butter or margarine and sprinkle with sugar.
  • 11 bake at 350 degrees, for 55-60 minutes or until a knife inserted near the center, comes out clean and the top is golden brown.
