Ginger Cabbage

Ingredients

- 1 teaspoon canola oil
- 1 tablespoon fresh ginger, grated
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 head red cabbage, cored and shredded (about 1 pound)
- 2 granny smith apples, cored, peeled, and grated
- 1 tablespoon pure maple syrup
- 1/4 teaspoon salt
- 2 teaspoons cider vinegar
- 1/2 cup pumpkin seeds, toasted
Recipe
- 1 in a large heavy skillet with lid, warm canola oil over medium-low heat.
- 2 add the ginger, cinnamon, and cloves. cook, stirring, for 10 to 15 seconds.
- 3 add the cabbage, apples, maple syrup, and salt.
- 4 stir, reduce heat to low, cover, and cook for about 30 minutes.
- 5 after the 30 minutes, add the vinegar and increase heat to medium.
- 6 cook for about 5 minutes, or until most of the liquid evaporates.
- 7 sprinkle each serving of cabbage with 2 tablespoons of the pumpkin seeds.
