Ginger Cabbage

Ingredients

  • Servings: 4
  • 1 teaspoon canola oil
  • 1 tablespoon fresh ginger, grated
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 head red cabbage, cored and shredded (about 1 pound)
  • 2 granny smith apples, cored, peeled, and grated
  • 1 tablespoon pure maple syrup
  • 1/4 teaspoon salt
  • 2 teaspoons cider vinegar
  • 1/2 cup pumpkin seeds, toasted

Recipe

  • 1 in a large heavy skillet with lid, warm canola oil over medium-low heat.
  • 2 add the ginger, cinnamon, and cloves. cook, stirring, for 10 to 15 seconds.
  • 3 add the cabbage, apples, maple syrup, and salt.
