Healthy Vegan Berry Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 tablespoon ground flax seeds
  • 3 tablespoons water
  • 1 cup whole wheat flour
  • 1/2 cup spelt flour
  • 1/2 cup oat flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2-3/4 cup artificial sweetener (i use sucanat)
  • 3/4 cup almond milk
  • 1/3 cup applesauce (you can use pumpkin, fig or prune puree as well)
  • 1 teaspoon vanilla extract
  • 1 cup berries (frozen)

Recipe

  • 1 375 degree preheated oven you will a 12 cup muffin pan.
  • 2 mix together in a medium bowl and set aside the ground flax seeds and filtered water.
  • 3 mix the dry ingredients together by sifting in a large mixing bowl.
  • 4 add the milk, applesauce and extract to the flax/water mixture.
  • 5 add the wet ingredients into the dry mix bowl stirring until just mixed.
  • 6 add the berries and stir until just mixed.
  • 7 spoon into muffin tins and bake for 20-25 minutes.
  • 8 let cool a few minutes on a wire rack.
  • 9 top with earth balance vegan spread and enjoy! :).
