Healthy Vegan Berry Muffins

Ingredients
- 1 tablespoon ground flax seeds
- 3 tablespoons water
- 1 cup whole wheat flour
- 1/2 cup spelt flour
- 1/2 cup oat flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/2-3/4 cup artificial sweetener (i use sucanat)
- 3/4 cup almond milk
- 1/3 cup applesauce (you can use pumpkin, fig or prune puree as well)
- 1 teaspoon vanilla extract
- 1 cup berries (frozen)
Recipe
- 1 375 degree preheated oven you will a 12 cup muffin pan.
- 2 mix together in a medium bowl and set aside the ground flax seeds and filtered water.
- 3 mix the dry ingredients together by sifting in a large mixing bowl.
- 4 add the milk, applesauce and extract to the flax/water mixture.
- 5 add the wet ingredients into the dry mix bowl stirring until just mixed.
- 6 add the berries and stir until just mixed.
- 7 spoon into muffin tins and bake for 20-25 minutes.
- 8 let cool a few minutes on a wire rack.
- 9 top with earth balance vegan spread and enjoy! :).
